The way to make creamy mashed potatoes without adding an excessive amount of fat?
- I prefer to use Yukon Gold potatoes, they’ve a buttery texture and golden color.
- When the potatoes are still warm, I drain them and add a mix of milk, broth and sour cream with only a small amount of butter for flavor.
- To mash the potatoes I prefer to use a potato masher or a hand mixer to get them extra whipped. I don’t recommend an immersion blender, it is going to make it pasty.
Variations:
- Potatoes – if you wish to sub out the potatoes, you should use russet or Idaho potatoes.
- Dairy Free – sub the milk for dairy free milk and swap the sour cream for this dairy-free heavy cream.
