That is one of the popular and delicious breakfast dishes in Colombia. The smell of sauteed scallions and tomatoes really brings me back each time I make this for breakfast. Once I make them at home, I often use a combo of whole eggs and egg whites, but you need to use whole eggs only in the event you prefer.
